Triple Chocolate Cranberry & Almond Rocky Road

 

1st Layer

 

• Melt 150g dark chocolate and 25g of butter over heat or micro (15s intervals stirring each time)

• While melting, mix in bowl

o 3 biscuits broken up into pieces (digestive)

o 30g cranberries

o 30g almonds (other nut)

o 40g marshmallows

• Mix together, pour and press. Fridge for 30 mins

 

2nd Layer

 

• Melt 150g milk chocolate and 25g of butter over heat or micro (15s int)

• While melting, mix in a bowl

o 4 biscuits, broken into pieces (ginger nut)

o 50g raisins

o 30g cherries

o 40g marshmallows

o 10g toasted rice (well known rice cereal)

• Mix together, pour and press. Fridge for 30 mins or skip straight to 3rd layer

 

3rd Layer

 

• Melt 180g of chocolate, pour on top and spread

• Sprinkle generously marshmallows, cranberries, nuts, anything you like on top of the chocolate

• Chill for at least 2 hours, cut into squares or slices
